A quick and flavorful dish with tender chicken, crunchy cashews, and colorful vegetables, perfect for a weeknight dinner.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup cashews
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the vegetable oil in a large pan or skillet over medium heat.
  2. Brown the cubed chicken in the pan until cooked through, about 5-7 minutes.
  3. Add minced garlic, chopped onion, and bell pepper to the pan and stir-fry for 3-4 minutes.
  4. Stir in the soy sauce and oyster sauce, mixing well to coat everything.
  5. Sprinkle the cashews and cook for another 2 minutes to toast them.
  6. Taste and season with salt and pepper as desired.
  7. Serve the Cashew Chicken over a bed of cooked rice.

Notes

For a gluten-free option, use tamari instead of soy sauce. You can also add vegetables like carrots or snap peas for variety.
