  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon in a large bowl.
  3. Whisk together the eggs and vegetable oil in another bowl, then add the grated carrots, crushed pineapple, and nuts if using.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  8. Beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract.
  9. Frost the top of one cake layer, place the other on top, and add frosting to the top and sides.
  10. Slice your cake and serve.
