  • 1 large tortilla
  • 2 eggs
  • 1/4 cup cooked breakfast sausage or bacon
  • 1/4 cup shredded cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped lettuce
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. Scramble the eggs in a skillet over medium heat until fluffy and fully cooked. Set aside.
  2. Assemble the crunchwrap by placing the tortilla on a flat surface and layering the scrambled eggs, sausage or bacon, cheese, tomatoes, and lettuce in the center.
  3. Fold the tortilla over the fillings, starting from the bottom, then folding in the sides to seal everything inside.
  4. Heat a non-stick skillet over medium heat and place the crunchwrap seam-side down. Cook until golden brown, about 3-4 minutes on each side.
  5. Serve with a dollop of sour cream and a side of salsa.
