Deliciously soft and hearty Blueberry Oatmeal Muffins, perfect for breakfast or an afternoon snack, packed with juicy blueberries and wholesome oats.

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the rolled oats and milk in a bowl. Let sit for about 10 minutes.
  3. Whisk together the flour, sugar, baking powder, salt, and cinnamon in another bowl.
  4. Add the soaked oat mixture, vegetable oil, egg, and vanilla extract to the dry ingredients. Stir gently until just combined.
  5. Fold in the blueberries evenly throughout the batter.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

For extra texture, consider adding chopped nuts or shredded coconut. If using frozen blueberries, do not thaw them before mixing.
