A delightful blend of French toast and juicy blueberries, all baked together in one comforting casserole. Perfect for busy mornings or special occasions.

  • 1 loaf of bread (preferably challah or brioche)
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cut the loaf of bread into cubes and place half of it in the baking dish.
  3. Sprinkle half of the fresh blueberries over the layer of bread.
  4. Layer the remaining bread cubes on top of the blueberries, followed by the last of the blueberries.
  5. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  6. Pour the egg and milk mixture evenly over the bread and blueberries.
  7. Cover the dish and refrigerate for at least 1 hour, or overnight.
  8. Bake for 40-50 minutes until the top is golden brown and the center is just set.
  9. Dust with powdered sugar before serving.

Notes

Use stale bread for the best texture. Experiment with different fruits or spices for added flavor.
