A moist and fluffy blueberry coffee cake that brings joy and warmth to every occasion, perfect for brunch or afternoon tea.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to ensure easy removal of the cake later.
  2. Mix together the flour, sugar, baking powder, and salt in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually add the flour mixture, alternating with the milk, and mix until smooth.
  6. Fold in the blueberries gently, being careful not to break them.
  7. Pour half of the batter into the prepared baking pan, smoothing it out evenly.
  8. Mix together the brown sugar and cinnamon, then sprinkle this mixture over the batter in the pan.
  9. Pour the remaining batter on top and spread it evenly over the cinnamon mixture.
  10. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan before transferring it to a wire rack.

Notes

Enjoy warm with whipped cream or vanilla ice cream. Store leftovers in an airtight container.
