- 1 lb lean ground beef (or mild/hot sausage)
- 16 oz processed cheese loaf (such as Velveeta, cubed)
- 10 oz canned diced tomatoes with chilies (such as Rotel, 1 can with juices)
- 0.5 tsp chili powder (optional)
Instructions
- In a large skillet, cook the ground beef or sausage over medium-high heat until no pink remains, about 6–8 minutes.
- Drain the excess fat thoroughly.
- Turn the heat down to medium for melting the cheese.
- Add the cubed processed cheese, the entire can of Rotel tomatoes with juices, and chili powder (if using) to the skillet.
- Stir continuously over medium heat until the cheese has fully melted and the dip is smooth and creamy, about 5–7 minutes.
- Transfer to a serving bowl or keep warm in the skillet. Serve immediately with tortilla chips for dipping.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat.
