Comforting Beef Birria Tacos filled with tender meat and rich flavors, perfect for gatherings or weeknight dinners.

  • 2 lbs beef chuck roast
  • 23 dried guajillo chiles
  • 23 dried ancho chiles
  • 4 cloves garlic
  • 1 small onion, chopped
  • 2 tsp cumin
  • 1 tsp oregano
  • 23 cups beef broth
  • Corn tortillas
  • Chopped cilantro
  • Diced onions
  • Lime wedges

Instructions

  1. Toast the chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
  2. Remove the chiles from the skillet and soak them in hot water for about 15 minutes until softened.
  3. Combine the soaked chiles, garlic, chopped onion, cumin, oregano, and a bit of beef broth in a blender. Blend until it forms a smooth paste.
  4. Place the beef chuck roast in a large pot and pour the chiles sauce over it. Add enough beef broth to cover the meat.
  5. Bring to a gentle simmer, cover the pot, and let it cook for about 2-3 hours until the beef is tender and shreds easily.
  6. Shred the beef using two forks and serve it in warm corn tortillas, topped with chopped cilantro and diced onions, along with lime wedges.

Notes

You can prepare the sauce a day in advance. Beef can be frozen for up to 3 months.
